Sago Pudding Recipe

Ingredients : 
Sago ; 100ml
milk; 800ml
eggs; 4 large each
salt; 2ml
sugar 75ml
vanilla essence 10ml

±50g margarine to grease the tray

Method: 

Pre-heat oven to150°C,
Grease the Pan
Soak sago in 200ml milk for 1 hour
Bring rest of the milk to the boil (add soaked sago),
Cook mixture for 5 minutes after boiling point is reached (stir continuously)
Whisk egg and sugar till pale and fluffy (Full ribbon sabayon)
add vanilla essence, salt and sago mixture to the sabayon. Hot to cold method
Pour mixture into the greased oven tray, place tray into the larger oven tray(fill half way with water)
Bake for ±45 minutes or till mixture is set.

Chefs tips : Serve with golden syrup or strawberry jam

 For a rice pudding, replace sago with rice.
