12-05-2011 Tambuki Camp Managers Function

This function was done for the management of Sondela, The directors of Sondela, There was a 7 Course dinner prepared.Upon arrival the guests had Gluvine or egg nog.For starters, there was Sushi, soup and home made bread. For the main course there was lamb shank, Beef fillet, scallops and mixed vegetables and risotto. For the dessert there were Petifours.



This was the Dinning area for the guests.
 A lot of preparation went into this event as we had to set up a make shift outdoor kitchen, we had 2 gas burners, 1 gas grill and 2 braai's and a large potjie pot that the lamb shank was made in.
This section was the soup and bread section.


This was the fish and sushi section and half the grill section prep area.

This is an example of the Sushi rolls and risotto made for the evening.
Even though I did not prepare any food, I helped ensure all the food was delivered to the guests and all the plates were the clean, and to the desired plating scheme.
